As many family members and friends will say, i am not known for being the most cheerful during the holidays. In fact i have been called Scrooge and the Grinch on occasion. So, now that my secret is out, please don't think less of me....it just is not my favorite. Shame on me, i know!!! But today i thought that i would try to muster a little cheer, for the kids! It was hard...with moving and having a sea of boxes surrounding us and threatening to swallow us whole at any minute...i have kind of forgotten that it was christmas next week.
But, i went for it today...turned on the christmas music(i know, shocking!), and decided today was the day for making some cookies and maybe a christmas craft or two. Recently my mom's recipe for gingersnaps has been unearthed and it was a blast from the past. So yummy, i can not even tell you! The kids loved them too.They got out their christmas cookie making aprons, and clearly put their best faces on. Mitch was scaring me a little. They were both very helpful and willing cookie elves. We were not disappointed. Those gingersnaps were the best ever.....they are lined up all across my kitchen counter, but i don't think they are going to last long. Yum!!!
Molasses Ginger Snaps
3/4 c. margarine or shortening
1 c. Sugar(and a little extra for rolling)
1/4 c. Molasses
1 Egg
2 c. Flour
1 t. Baking Soda
1/4 t. Salt
1 t. Cinnamon
1 t. Cloves
1 t. Ginger
Cream together shortening and sugar. Add eggs and molasses. Mix together. In a small bowl combine the dry ingredients. Add to creamed mixture. For into balls and roll in sugar. Place wide apart on slightly greased cookie sheet. Bake at 375 for 8-10 minutes. Makes 3-4 dozen.

I heart gingersnaps....but only at Christmastime. YUM.
