what's for dinner?


This was last nights dinner. Chicken Curry in a Hurry. That is really the name. We don't get to have it often but it sure is good. The parents came up for the weekend last night so i made dinner. I love that it is easy and not the same old thing we seem to always eat. Ever feel like you are in a food rut? Here is the recipe if you are interested.

Chicken Curry in a Hurry
1 1/2 T Olive Oil
1 small yellow onion, thinly sliced
2 t Curry powder
1/2 c plain Yogurt
3/4 c Heavy Cream
1/2 t Kosher Salt
1/4 t Black Pepper
1, 14.5 oz can diced Tomato, drained(optional)
1 Rotisserie Chicken
2 c cooked Rice(optional)

Heat the oil in a large skillet over medium heat. Add the onion and saute, stirring occasionally, for about 7 minutes. Sprinkle with the curry powder and cook, stirring, for 1 minute. Add the yogurt and cream and simmer gently for 3 minutes. Stir in the salt and pepper and tomatoes. remove from heat. Slice the chicken and pre-make the rice. We like to eat it with the sauce and chicken over the rice, and for a little extra top it with golden raisins and almonds or pistachios.
